Chocolate Tart Recipe

I saw an amazing salt caramel chocolate tart recipe on A Mummy Too so decided we would try our own chocolate tarts! I can't really bake but these looked so easy to do! We made 4 mini and 1 big chocolate tarts and they were just divine if I do say so myself! Ok we cheated on the pastry using a short crust pastry mixture but made the ganache ourselves.
Here is our recipe...

  • 450g shortcrust pastry mixture
  • 8-9 tbsp water
  • 1 cup double cream
  • 3/4 cup of cocoa powder
  • 1/4 cup granulated sugar
  • 1 tbsp. coffee
  • 1 tbsp. vanilla
  • a little oil or butter
  • 1 egg

To make Pastry cases

Mix the pastry mixture and water in a bowl until dough like consistency but try not to handle too much, roll out on a floured surface and grease pastry cases with the oil or butter before inserting the pastry into the cases, brush with egg then bake for 20-25 minutes until golden in colour. If they start to rise in the middle I place a bit of grease prof paper inside the cases when baking.

To make Ganache

Heat double cream in a saucepan until simmering but not boiling then remove from heat and add the cocoa powder, coffee and vanilla. Mix until it thickens to the consistency you would like, I like it lovely and thick! Allow to cool slightly.

Once you have made the pastry cases and ganache has cooled a bit you can add the ganache to the cases and put in the fridge to set before eating!
